We have had to identify our lowly blog as Recipe Club Texas
because someone else has already staked their claim on
plain ol' Recipe Club.
Of course I had to kick it off with a photo!
This is a good representation of our group -
give or take a few. You will recall we were at
Claudia's and the theme was
Homemade Christmas.
Here is the recipe for Grandma Jo's caramel corn -
delicious any time of the year!
15 cups popped popcorn (3 bags)
1 cup packed brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 tsp salt and 1/2 tsp baking soda
Heat oven to 200.
Heat brown sugar, butter, corn syrup and salt over medium high heat
stirring frequently for 5 minutes. Remove from heat and stir in baking soda.
Coat popcorn well with caramel.
Bake for 1 hour stirring every 15 minutes or so.
Doubling the caramel works even better!
Helpful hint - Place the popped corn in a brown grocery
bag and then pour the caramel. This allows you to shake
to cover and not stir.
